Tries from Patrick Lambie and JP Pietersen helped the Sharks overturn an eight-point second-half deficit to snatch a 26-21 victory over the Waratahs.
The hosts led 13-11 after a first half containing a try for each team, and the second half followed a similar pattern to leave them victorious.
Kurtley Beale put the Waratahs ahead with a penalty but was at fault when Lambie scored the first try, seizing on Beale's knock-on just outside the 22 and dashing between two defenders to score under the posts.
Beale and Lambie traded penalties before the Waratahs lost Sekope Kepu and Ryan Cross to injury.
The Waratahs then got close at half-time, Daniel Halangahu snatching up a loose ball 10 metres from his own line and breaking to the other end of the field for winger Lachie Turner to touch down in the corner.
Good work by the Tahs scrum set up position for Halangahu to beat two defenders and touch down after the break as the visitors grabbed the lead with Beale's conversion increasing it.
The Sharks, still down to 14 men after Jean Deysal was sin-binned in the lead-up to the penalty, found a response when winger Pietersen snatched up a rogue offload to break away for a try.
Lambie converted and added a penalty to give his side a two-point lead.
The Waratahs almost grabbed a winning try but Atieli Pakalani spilled Beale's grubber forward over the line and another kick from Lambie late on gave the Sharks a five-point lead which proved sufficient.
The result lifts the Sharks above their opponents into fifth place in the Super 15 standings.
